Glamorgan Sausages (courtesy of Little Qualicum Cheeseworks)
• dab of butter
• 1/4 cup chopped leaks
• 1/2 cup Caerphilly cheese
• 1/2 cup breadcrumbs
• 2 eggs
• milk to moisten
• salt & pepper to taste

1. Melt butter in pan and gently heat leeks to soften.
2. Combine all ingredients in a bowl, adding just enough milk to moisten.
3. Shape into ‘sausages’.
4. Dust lightly with flour and fry until golden brown.
5. Serves well with chutney.
