Every December the Team at Arbutus RV in Courtenay holds a good-natured Chili Cook-off. Customers are invited to sample different chili recipes prepared by team members and then cast their vote. Having sampled some of each, I can honestly say that I didn’t find any one a clear winner, every chili had it’s own tasty twist and charms, from gourmet to traditional. This particular recipe has been our Guests’ Choice Winner more than once!
Larry’s Spicy Chocolate Mesquite Chili
Ingredients:
- 2 lb. regular ground beef
- 2 onions rough cut
- 2 green bell peppers rough chopped
- 2 red bell peppers rough chopped
- 1 whole garlic fine chopped
- 2 large cans whole tomatoes
- 1 large can red kidney beans (drained)
- 1 medium can baked beans in tomato sauce
- 3 tablespoons chili powder
- 3 dashes Tabasco sauce
- 1/2 teaspoon cayenne pepper
- 1 tablespoon spicy mesquite powder
- 2 tablespoons BBQ sauce
- 4oz semi sweet chocolate
Method:
- brown beef
- saute’ veggies, onions and garlic
- add to beef
- add canned tomatoes
- simmer for 30 minutes
- add kidney beans and spices
- simmer for one hour stirring frequently
- add baked beans and chocolate
- simmer another 30 minutes stirring frequently
Serve with fresh baked corn bread and orange slices.
